This is a no frills, classic washed coffee that is deep and complex, yet juicy and nuanced. At Rogue, that's exactly what we (the "royal we") like.
Recipe

COFFEE | 15g
WATER | 225g
TEMP | 90-92C
TIME | 2:15-2:30

Recommended 3 pours:
1 | 30g bloom for 45 seconds
2 | Pour using a circle center pour to 135g
3 | Once almost fully drained, final pour to 225g

Normally, I like to brew washed coffees on a flat-bottom brewer to extract more sweetness; however, this papayo does well on a V-shaped dripper, like V60, to bring more acidity and brightness into the cup. When brewing this coffee, I aim to deemphasize its innate intensity and heavier body in order to highlight more vibrancy.

Sourced through Cofinet, both exporter and growers. Diofanor Ruiz is one of Cofinet's 15 "star producers" with whom they've been working together since 2015. Diofanor grows many varieties of coffee plant and serves as the local nursery, sharing young plants grown from seed with other producers in the region.
