Enter the Las Lajas successor! As Las Lajas stock from last season came to a close, I kept a look out for its replacement- a natural processed coffee and something funky (for Rogue standards). This castillo from Sebastian Gomez caught my attention, mainly because of its strongest flavor note- one that reminds of a natural white wine and reminiscent of the funky orange wine note I loved in Las Lajas. Sebastian Gomez is known for processing shorter fermentations, in this case 48 hours, meaning the fruit notes are not overpowered by fermentation notes, still resulting in a relatively clean cup. Funky coffee lovers, this one is for you!
Recipe

COFFEE | 15g
WATER | 220g
TEMP | 90-91C
TIME | approx. 2:00

Recommended 3 pours:
1 | 30g bloom for 30 seconds
2 | Pour using a circle center pour to 135g
3 | Once almost fully drained, final pour to 220g

Because La Divisa is a Natural processed coffee, I like to brew it using a V-shaped brewer, like V60, to encourage bypass. This way we highlight the funky white wine and sour cherry notes, rather than the more bitter cacao nibs and fermentation notes. Try to target a total draw down time of 2:00 or more, as a shorter total brew time may result in a sharp or drying mouthfeel.

Sourced through Cofinet, both exporter and growers. Sebastian Gomez is one of Cofinet's "star producers" from whom they have been buying his entire production, in the case of Seb since 2015. La Divisa has its own quality lab onsite and is experienced in fermentations, leading to consistent results year over year.
