Las Lajas is a funky fruity show-stopper and a hit with everyone who tries it. Funky and intense, but without the taste of heavy processing notes, rounded out by the caramel sweetness. The Chacón family has a long-standing history in coffee production and innovation in natural- and honey processing, as well as organic agricultural production.

COFFEE | 15g
WATER | 225g
TEMP | 92-93C
TIME | 1:30-2:00

Recommended single, circular pour method after the bloom:
1 | 30g bloom for 30 seconds
2 | Single circular pour to 225g

The shorter overall brew time keeps it punchy and minimizes bitterness. I like to brew Las Lajas using a V-shaped brewer, like V60, to enhance the acidity.
